Do you know that Kimchi has a lot of health benefits and it is not difficult at all to make?
Today let's make kimchi together by just following this super easy recipe!
INGREDIENTS:
You will need to prepare π:
- 1 napa cabbage or chinese cabbage
- 3/4 cup salt
- 3 cups water
- 1/2 cup sweet rice flour
- 1/4 cup sugar
- 3/4 cup fish sauce
- 3/4 cup korean hot pepper flakes (gochugaru)
- 2 tbsp grated garlic
- 2 tbsp minced onion
- 1 tbsp minced ginger
- 1 cup korean raddish (shredded)
- 3/4 cup green onions (sliced)
- 1/4 cup shredded carrots
Let's prepare also some necessary utensils:
- 1 large tub
- 1 large bowl
- Kitchen gloves
- 1 airtight container or jar
PREPARATION:
Step 1: Cut the cabbage into quarters and remove the bottom of each quarter. Then cut them into bite size pieces.
STEP 2: Put these pieces in a large tub. Spinkle 3/4 cup of salt. Then add 4 cups of water. Now let's mix them well for few minutes. Make sure that you hands are clean if you don't want to wear kitchen gloves.
STEP 3: Leave the cabbage sit for one hour and turn the cabbage over to salt evenly every 20 minutes.
Meanwhile, let's prepare the porridge!
STEP 4: Add 3 cups of water into a small cooking pot + 3/4 cup of sweet rice flour + 1/4 cup of sugar then mix them well.
STEP 5: Stir and cook until it is translucent. Then set aside and let it cool off.
The cabbage tub now should be ready after 1 hour.
STEP 6: Rinse the cabbage in cold water 3 times to clean it thoroughly. Then drain the cabbage and put it aside.
STEP 7: Pour the cold porridge into a large bowl. Add 3/4 cup of fish sauce and 3/4 cups of hot korean pepper flakes (you can adjust it depending on your taste). Then 1/2 teaspoon of grated garlic + 1/2 tea spoon of minced onion + 1 tea spoon of ginger.
STEP 8: Now, mix them well before adding 1 cup of Korean raddish + 3/4 cups of sliced green onion + 1/4 cup of shredded carrots. Mix all well together! Tips: you can use your hands to mix it even better!
STEP 9: Add little by little all the cabbage into the mixture and then mix all them well!
DONE π You can put the kimchi into a jar or airtight container
You can eat it fresh right after you've finished. Alternatively, you can leave it fermented at room temperature for one day then conserve it in refrigerate. π
EATING TIPS:
Kimchi is tasty to eat it as is, but you can eat it together with many other Korean dishes such as with rice, noodle, meat or salad.
In Korea, people eat kimchi even with Pizza!π
